Pork loin is a tender, succulent cut of meat, whether it is bone-in or boneless. Boneless pork loins can be roasted individually or stacked and tied to make a rolled roast. To get that perfect crackling pre heat your oven to 200 degrees, boil the jug, pat your pork dry with paper towel, pour boiled water over the roast, part dry again and sprinkle with salt. roast for 45 min, and then reduce heat to 200*, roast for one more hour and then rest (this cooking time is based on a 2kg pork loin).
