Also known as the New York or Sirloin. Cooked right the Porterhouse gets a great flavourful crust on the outside with a perfect medium – rare on the inside. Cut from the short loin of the cow it’s quite tender, so lends itself to very fast, very high cooking, this is what will develop to that crust on the outside.
